- Bean Dry Mix;
- 1/3 cup Black beans
- 1/3 cup Navy beans
- 1/3 cup Kidney beans
- 1/3 cup Baby Lima beans
- 1/3 cup Pinto beans
- 1/3 cup Chick peas (Garbanzos)
- 1/3 cup Split peas
- 1/3 cup Lentils
- 1/3 cup Pearl barley
- 1/3 cup Black-eyed peas
- 4 chicken breasts – boned, skinned and cubed
- 4 chicken thighs – boned, skinned and cubed
- 1 lb. smoked sausage cut in chunks
- ham hock
- 1 lb. ham – cubed
- 2 cans stewed tomatoes
- 1 tablespoon salt
- 2 medium onions – chopped
- 2 cloves garlic – minced
- 6 sticks celery – diced
- 1 large bell pepper – chopped
- 1 package Bouquet Garni
- Rinse bean mix.
- Add water to cover and salt.
- Soak overnight.
- Drain.
- Add 3 1/2 quarts water, ham hock, and Bouquet Garni.
- Cover and simmer 3 hours.
- Add remaining ingredients.
- Simmer until chicken is done (15 to 30 minutes).
