Dinner-in-a-Pumpkin

  • 1 large pumpkin [12 to 14 inches in diameter about 10 inches deep]
  • 1.5 Large onions, chopped
  • 3.4 lbs ground beef [or sausage or bacon or a mix]
  • 1 lb bacon ends
  • 4 Tablespoons soy sauce
  • 1 (8 ounce) can sliced mushrooms
  • 2 (15 ounce) can cream of chicken soup
  • 3 cups cooked rice
  • 1 (8 ounce) can sliced water chestnuts

  1. Brown meat and drain
  2. Cook rice
  3. Combine all ingredients
  4. Heat oven to 350′
  5. Clean out Pumpkin
  6. Fill pumpkin with mixture
  7. Place on rimmed baking sheet on foil
  8. Bake 2 1/2 to 3 hours until pumpkin is cooked

2018 – made this the day before and bake the day of for 3+ hours – 2 hours at 350′ and 1 hour at 375′

  5. 2 Tablespoons soy sauce
  6. 2 Tablespoons brown sugar
  7. 1 (4 ounce) can sliced mushrooms
  8. 1 (15 ounce) can cream of chicken soup
  9. 1 1/2 cups cooked rice
  10. 1 (8 ounce) can sliced water chestnuts
  1. Brown meat and drain
  2. Cook rice
  3. Combine all ingredients
  4. Heat oven to 350′
  5. Clean out Pumpkin
  6. Fill pumpkin with mixture.
  7. Place on rimmed baking sheet on foil or parchment paper.
  8. Bake 2 1/2 to 3 hours until pumpkin is cooked
