- 1 large pumpkin [12 to 14 inches in diameter about 10 inches deep]
- 1 or 2 onions, chopped
- 3 to 4 lbs ground beef [or sausage or bacon or a mix]
- 1 lb bacon ends
- 4 Tablespoons soy sauce
- 1 (8 ounce) can sliced mushrooms [optional]
- 2 (15 ounce) cans cream of chicken soup
- 3 or 4 cups cooked rice
- 1 (8 ounce) can sliced water chestnuts
- Brown meats and drain
- Cook rice
- Combine all ingredients
- Heat oven to 350′
- Clean out Pumpkin
- Fill pumpkin with mixture
- Place on rimmed baking sheet on foil
- Bake 2 1/2 to 3 hours until pumpkin is cooked
