Divinity Christmas Candy

Ingredients:

  • 4 cups sugar
  • 1 cup light corn syrup
  • ¾ cup water
  • ½  teaspoon salt
  • 3 egg whites
  • 1 teaspoon vanilla
  • 1 cup nuts
  1. In the two quart saucepan combine the sugar, the light corn syrup, water, and salt.
  2. Heat about 19 minutes stirring every five minutes until mixture reaches 260 degrees on a candy thermometer.
  3. Beat egg whites very stiff maybe 15 minutes.
  4. Stir in hot syrup on high on the mixer to the egg whites. Likely 12 minutes.
  5. Mix in vanilla and nuts.
  6. Drop candy on waxed paper and let cool. oh
