Rocky Road Bars


  • 2 cups (12 ounce package) chocolate chips, divided in half
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 cup granulated sugar
  • 6 tablespoons (3/4 stick) butter
  • 1 ½ teaspoons vanilla extract
  • 2 eggs
  • 2 cups (4 oz) Miniature marshmallows
  • 1 ½ cups coarsely chopped walnuts or 1 can whole deluxe mixed nuts

Pan: Greased 13X9-inch pan.

Oven:  375′

Time:  8 to 11 minutes

Yield:  2 ½ dozen bars

  1. Microwave 1 cup morsels in medium, microwave-safe bowl on high power for 1 minute; stir
  2. Microwave at additional 10 to 20 second intervals; stir until smooth
  3. Cool to room temperature
  4. Combine flour and baking powder in small bowl
  5. Mix in sugar, butter and vanilla in large mixer bowl until crumbly
  6. Mix in eggs
  7. Add melted chocolate; beat until smooth
  8. Gradually mix in flour mixture
  9. Spread batter into greased 13×9 inch baking pan
  10. Bake in preheated 375 degree oven for 16 to 20 minutes or until wooden pick inserted in center comes out still slightly sticky
  11. Remove from oven
  12. Sprinkle immediately with marshmallows, nuts and remaining morsels
  13. Return to over for 2 minutes
  14. Remove from oven; cool in pan on wire rack
