Iced Molasses Raisin Cookies


  • 1 cup [2 cubes] butter, softened
  • 3 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1 cup dark brown sugar
  • 3/4 cup molasses
  • 1 large egg
  • 1 1/2 cups raisins

Preheat oven to 300°

Parchment paper on cookie sheets

Bake 25 to 27 minutes

  1. combine flour, soda, salt, cinnamon, ginger, and allspice in a medium bowl
  2. mix well and set aside
  3. beat sugar and butter in a large bowl with a mixer at medium speed to a grainy paste
  4. add molasses and egg
  5. beat until light and fluffy
  6. add the flour mixture and raisins
  7. blend at low speed until combined
  8. divide dough in half
  9. shape each half into a roll about 1 1/2 inches in diameter
  10. wrap rolls in wax paper and refrigerate until firm – about two hours
  11. slice cookies one half inch-thick
  12. place on parchment covered cookie sheets
  13. bake 25 to 27 minutes

Icing

1  cup powered sugar

1 to 2 Tablespoons milk

  1. Blend powered sugar and milk in a small bowl until smooth
  2. Drizzle cookies with icing
