- 2 cups Great Northern or Navy beans.
- 1/2 cup brown sugar
- 1/2 cup molasses
- 1 teaspoon dry mustard
- 1 lb. thick sliced bacon.
- 1 medium onion – sliced
- 1/2 teaspoon salt
Pan: Covered 2 quart baking dish
Oven: 300
Time: 5 to 7 hours
- 1. Rinse beans.
- 2. Add to 2 quarts of cold water.
- 3. Bring to boil and simmer 2 minutes.
- 4. Add salt.
- 5. Simmer for 1 hour covered.
- 6. Cook bacon until it just starts to be crisp to reduce fat.
- 7. Drain and measure soak-water.
- 8. Add water to make 2 cups, if necessary.
- 9. Mix soak-water, sugar, mustard, and molasses.
- 10. Layer beans, bacon, and onions in baking dish.
- 11. Cover with soak-water mixture.
- 12. Cover and bake.
- 13. Add more liquid as needed.
