Huckleberry Pie


  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon (if desired)
  • 4 cups drained canned huckleberries
  • 1 tablespoon lemon juice
  • 2 tablespoons butter

Pan 9″ pie plate

Oven: 425

Time: 45 Minutes

Prepare pastry.

  1. Stir together sugar, flour and cinnamon.
  2. Mix with berries.
  3. Turn into pastry-lined pie pan.
  4. Sprinkle with lemon juice.
  5. Dot with butter.
  6. Cover with top crust which has slits cut in it.
  7. Seal and flute crusts.
  8. Cover edge with 2 to 3 inch strip of aluminum foil to prevent
    excessive browning.
  9. Remove foil last 15 minutes of baking.
