Date Chiffon Pie


  • 1 9 inch pie shell
  • 1 envelop gelatin
  • ¼ cup cold water
  • 1 cup milk
  • 2 egg yolks
  • ¼ cup sugar
  • ¼ tsp salt
  • 1tsp vanilla
  • 1 cup dates
  • ¾ cup whipping cream – whipped stiff
  1. Soften 1 envelop gelatin in ¼ cup cold water
  2. Beat milk, egg yolks, sugar and salt.
  3. Cook in double boiler over hot water stirring constantly until it coats a metal spoon.
  4. Add softened gelatin, stir until dissolved. 
  5. Cool in the refrigerator stirring occasionally until thick.
  6. Add vanilla, dates and whipped cream.
  7. Beat 2 egg whites until slight mounds form,
  8. Add 2 Tablespoons sugar gradually beat until glossy peaks form.
  9. Put into pie shell, sprinkle with a little nutmeg
  10. Cool at least one hour. 
  11. Serve with whipped cream.
