Oatmeal Cake

Cake Ingredients

  • 1 ½ cups quick-cooking oats
  • 1 ¼ cups boiling water
  • ½ cup butter [1 cube] softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg

13 x 9 in pan [or it makes 2 – 8 x 8 x 1.5 foil pans – 2 1/2 cups each]

Oven 350′

  1. Grease and flour pans
  2. Pour boiling water over oats in bowl and stir well
  3. Let stand 20 minutes
  4. Mix flour, baking soda, salt, and cinnamon and mix well
  5. Cream butter, sugar, brown sugar, eggs and vanilla in mixing bowl.
  6. Add oats and mix well
  7. Add flour, baking soda, salt, and cinnamon and mix well.
  8. Pour into pan.
  9. Bake 40 minutes or until toothpick inserted in center comes out clean.
  10. Spread topping over warm cake

Topping Ingredients

1 cup packed brown sugar

¼ cup butter [1/2 cube] melted

¼ cup heavy cream

1 cup coconut

½ cup finely chopped pecans

  1. Mix all ingredients
  2. Spread over warm cake
  3. pre-heat broiler 2 or 3 minutes
  4. Place cake under broiler – top of cake 4 inches from broiler unit
  5. Broil until browned (1 1/2 to 2 minutes)

Two batches for Yellowstone – 4 cakes

2 cup granulated sugar

2 cup packed brown sugar

6 eggs

2 teaspoons vanilla

3 cups all-purpose flour

2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

3 teaspoons ground cinnamon

1 teaspoon ground nutmeg

  8. Pour into foil pans. [it makes 4 – 8 x 8 x 1.5 foil pans – 2 1/2 cups each]
