New England Baked Beans & Bacon


  • 2 cups Great Northern or Navy beans.
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 teaspoon dry mustard
  • 1 lb. thick sliced bacon.
  • 1 medium onion – sliced
  • 1/2 teaspoon salt

Pan: Covered 2 quart baking dish

Oven: 300

Time: 5 to 7 hours

  • 1. Rinse beans.
  • 2. Add to 2 quarts of cold water.
  • 3. Bring to boil and simmer 2 minutes.
  • 4. Add salt.
  • 5. Simmer for 1 hour covered.
  • 6. Cook bacon until it just starts to be crisp to reduce fat.
  • 7. Drain and measure soak-water.
  • 8. Add water to make 2 cups, if necessary.
  • 9. Mix soak-water, sugar, mustard, and molasses.
  • 10. Layer beans, bacon, and onions in baking dish.
  • 11. Cover with soak-water mixture.
  • 12. Cover and bake.
  • 13. Add more liquid as needed.
