Dinner-in-a-Pumpkin

  • 1 large pumpkin [12 to 14 inches in diameter about 10 inches deep]
  • 1 or 2 onions, chopped
  • 3 to 4 lbs ground beef [or sausage or bacon or a mix]
  • 1 lb bacon ends
  • 4 Tablespoons soy sauce
  • 1 (8 ounce) can sliced mushrooms [optional]
  • 2 (15 ounce) cans cream of chicken soup
  • 3 or 4 cups cooked rice
  • 1 (8 ounce) can sliced water chestnuts
  1. Brown meats and drain
  2. Cook rice
  3. Combine all ingredients
  4. Heat oven to 350′
  5. Clean out Pumpkin
  6. Pumpkin may be baked empty to reduce time [30 minutes at 375′]
  7. Fill pumpkin with mixture
  8. Place on rimmed baking sheet on foil
  9. Continue baking until pumpkin is cooked [30 more minutes]
