Congo Cookie Bars   

Lucille Miller (Weight) Wood


  • 2 1/4 cups flour (sifted)
  • 2 1/2 teaspoons baking powder [make sure it is fresh]
  • 1/2 teaspoon salt
  • 2/3 cups Crisco (butter flavored) shortening or butter
  • 2 1/4 cups brown sugar
  • 3 eggs
  • 1 cup nuts – walnuts or pecans (chopped)
  • 1 6 oz. pkg chocolate chips (1 cup) or double this
  • 1 teaspoon real vanilla

Pan: 15 1/2 x 10 1/2 x 1 – greased

Oven: 325′

Time: 30 minutes

  1. Melt shortening
  2. Cool shortening
  3. Chop nuts
  4. Cream together shortening, sugar, vanilla, and eggs
  5. Sift together dry ingredients
  6. Mix in dry ingredients
  7. Add nuts and chocolate chips
  8. Pour into greased pan
  9. Bake at 325′ 30 minutes
  10. Cool in pan
  11. Cut into bars while warm
