Carrot Pudding


  • 1 cup grated carrots
  • 1 cup grated potatoes
  • 1 tablespoon baking soda
  • 1/2 cup raisins
  • 1/2 cup currents
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1/3 cup molasses
  • 2 cups fine bread crumbs
  • 1 1/2 cup flour
  • 1 tablespoon salt
  • 1 tablespoon cinnamon
  • 1 tablespoon cloves
  • 1 tablespoon nutmeg
  • 1 cup walnuts – chopped

  • Pan: pudding molds or cans with tightly fitting lids (foil)
  • – greased and sugared
  • Kettle: High heat to start steaming
  • lower heat to maintain steam
  • Time: 3 hours

  • 1. Dissolve soda by sprinkling it in the potatoes.
  • 2. Mix all other ingredients.
  • 3. Put in buttered molds.
  • 4. Steam for 3 hours

Lemon and Rum Sauce
