Corned Beef and Vegetables


  1. 3 to 5 lbs. corned beef
  2. 1 large onion
  3. 3 whole cloves
  4. 2 carrots
  5. 1 rib celery
  6. 2 sprigs cilantro or parsley
  7. 1 green cabbage
  8. 6 to 8 new red potatoes
  9. 3 green onions
  10. 2 tablespoons chopped cilantro or parsley
  11. 1/2 lb fresh broccoli

salt and pepper

  1. Stud the onion with the whole cloves
  2. Peel and half the carrots
  3. Half the celery
  4. Core the cabbage and cut into 6 wedges
  5. Remove meat from package
  6. Cook corned beef as directed on package until tender
  7. Add onion, carrots, celery, and sprigs
  8. Remove corned beef and keep warm
  9. Add cabbage, potatoes, green onions, and chopped cilantro or parsley
  10. Salt and pepper to taste
  11. Cook until vegetables are tender (about 30 minutes)
  12. Add broccoli during last 5 minutes
  13. Serve
