Island Cookies


1 2/3 cup all-purpose flour
¾ teaspoon baking powder
½ teaspoon soda
½ teaspoon salt
¾ cup (1 ½ sticks) butter softened
¾ cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 egg
2 cups (11 ½ ounce package) milk chocolate chips
1 cup flaked coconut
¾ cup macadamia nuts or walnuts, chopped

 

Pan: Ungreased baking sheets

Oven: 375'

Time: 8 to 11 minutes

Yield: 2 dozen cookies

 

  1. Combine flour, baking powder, baking soda and salt in small bowl.

  2. Beat butter, brown sugar, granulated sugar and vanilla in large mixer bowl until creamy. 

  3. Beat in egg.

  4. Gradually blend in flour mixture.

  5. Stir in morsels, coconut and nuts.         

  6. Drop by slightly rounded tablespoons onto ungreased baking sheets.

  7. Bake for 8 to 11 minutes or until edges are lightly browned.

  8. Let stand for 2 minutes. 

  9. Remove from cookie sheets; cool on wire racks.
