Mint Brownies

Norma's Mint Brownies


2 1/4 cups sugar
1/4 cup honey
1 teaspoon salt
1/4 cup cocoa
2 squares Baker's baking chocolate (unsweetened)
1 1/2 cups butter-flavored Crisco
2 1/2 cups flour
7 eggs
1 cup walnuts - chopped
2 teaspoons vanilla

Pan: large jelly-roll (15.5 x 10.5 x 1) - well-greased
Oven: 350'
Time: 25 to 30 minutes

  1. Melt chocolate.

  2. Cream together sugar, Crisco, vanilla, and then honey

  3. Add melted chocolate.

  4. Sift salt, cocoa, and flour together.

  5. Mix well and add walnuts (will be very thick).

  6. Beat eggs.

  7. Mix in, until all ingredients are just together - don't over mix.

  8. Bake.

  9. Freeze.

  10. Frost with green-mint frosting.

  11. Freeze.

  12. Frost with chocolate frosting.


Green Frosting


3 cups powdered sugar

2 tablespoons butter - Option B 3 Tablespoons butter and 3 Tablespoons milk [may need more milk]

4 tablespoons milk

1 teaspoon mint flavoring

1 teaspoon green food coloring


Chocolate Frosting


1/4 cup cocoa

3 cups powdered sugar

2 tablespoons butter - Option B 3 Tablespoons butter and 3 Tablespoons milk [may need more milk]

4 tablespoons milk
