Oatmeal Cake

  • 1 cup old-fashioned oats
  • 1 1/4 cup boiling water
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cups floor
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

13 x 9 in pan

Oven 350'

  1. Grease and flour pan
  2. Pour 1 1/4 cup boiling water over oats in bowl
  3. Let stand 20 minutes
  4. Cream butter, sugar, brown sugar in mixing bowl
  5. Add oats, mix well
  6. Add eggs and vanilla. mix well
  7. Add flour, baking soda, salt, and cinnamon
  8. Add oats and mix well
  9. Pour into pan.
  10. Bake 30 to 35 minutes

Topping

  • 1/4 cup butter, softened
  • 1/4 cup heavy cream
  • 1 cup light brown sugar
  • 1 cup shredded sweetened coconut
  • 1/4 cup pecans (finely chopped) optional
  1. Mix all ingredients
  2. Spread over warm cake
  3. Place cake under broiler 2 inches from heat
  4. Broil until browned (1 to 1 1/2 minutes)
