2016 Oatmeal Cake

    1 ½ cups quick-cooking oats

    1 ¼ cups boiling water

    ½ cup butter softened

    1 cup granulated sugar

    1 cup packed brown sugar

    3 eggs

    1 teaspoon vanilla

    1 ½ cups all-purpose flour

    1 teaspoon baking soda

    ½ teaspoon baking powder

    ½ teaspoon salt

    1 ½ teaspoons ground cinnamon

    ½ teaspoon ground nutmeg

13 x 9 in pan [2 - 8 x 8 x 1.5 foil pan]

Oven 350'

  1. Grease and flour pans

  2. Pour 1 1/4 cup boiling water over oats in bowl

  3. Let stand 20 minutes

  4. Cream butter, sugar, brown sugar in mixing bowl

  5. Add eggs and vanilla. mix well

  6. Add oats and mix well

  7. Add flour, baking soda, salt, and cinnamon and mix well

  8. Pour into pan.

  9. Bake 40 minutes or until toothpick inserted in center comes out clean.

Topping

1 cup packed brown sugar

¼ cup butter melted

¼ cup heavy cream

1 cup coconut

½ cup chopped pecans finely chopped

  1. Mix all ingredients
  2. Spread over warm cake
  3. pre-heat broiler 2 or 3 minutes
  4. Place cake under broiler top of cake 4 inches from broiler unit
  5. Broil until browned (1 1/2 to 2 minutes)
