Oatmeal Cake
- 1 cup old-fashioned oats
- 1 1/4 cup boiling water
- 1/2 cup butter, softened
- 1 cup sugar
- 1 cup light brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/3 cups floor
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
13 x 9 in pan
Oven 350'
- Grease and flour pan
- Pour 1 1/4 cup boiling water over oats in bowl
- Let stand 20 minutes
- Cream butter, sugar, brown sugar in mixing bowl
- Add oats, mix well
- Add eggs and vanilla. mix well
- Add flour, baking soda, salt, and cinnamon
- Add oats and mix well
- Pour into pan.
- Bake 30 to 35 minutes
Topping
- 1/4 cup butter, softened
- 1/4 cup heavy cream
- 1 cup light brown sugar
- 1 cup shredded sweetened coconut
- 1/4 cup pecans (finely chopped) optional
- Mix all ingredients
- Spread over warm cake
- Place cake under broiler 2 inches from heat
- Broil until browned (1 to 1 1/2 minutes)
