(Halloween)


    Regular Batch Double Batch
    • 2 lbs. extra lean ground beef
    • 2 cups dried red kidney beans
    • 1/4 cup Crisco Oil
    • 1 tablespoon salt
    • 1 lb or more bacon ends
    • 1 cup chopped onion
    • 1 large clove garlic, minced
    • 1 28 oz. can tomatoes
    • 1 6 oz. can tomato paste
    • 4 tablespoons chili powder
    • 1/2 teaspoon cumin seed

     

    • 4 lbs. extra lean ground beef
    • 4 cups dried red kidney beans
    • 1/2 cup Crisco Oil
    • 2 tablespoon salt
    • 2 lb or more bacon ends
    • 2 chopped onions
    • 2 large cloves garlic, minced
    • 2 28 oz. can tomatoes
    • 2 6 oz. can tomato paste
    • 8 tablespoons chili powder
    • 1 teaspoon cumin seed

    2015

  1. Mix beans, oil and salt in large pan.
  2. Cover with water generously.
  3. Boil for 5 minutes to kill beans and split cell membranes (allowing starches and sugars that cause gas to dissolve into the soak water)
  4. Soak over night.
  5. Drain and rinse beans.
  6. Add three cups of water.
  7. Bring to a boil.
  8. Reduce heat to simmer.
  9. Cover and cook until done. (2 hours?)
  10. Fry bacon until crisp.
  11. Add beef and onions.
  12. Brown beef lightly.
  13. Stir into beans.
  14. Add remaining ingredients.
  15. Simmer for 15 minutes.
